From a Single Estate in the Mountains of Guatemala
Soluna is about balance—the meeting of sun and moon, clarity and warmth, origin and craft. Grown at around 5,900 feet in the highlands of Huehuetenango, Guatemala, this coffee comes from a single estate led by Carlos Palacios, a fourth-generation farmer with deep roots in Guatemalan coffee.
Carlos brought his family’s legacy with him to Minnesota, not just to start a new chapter, but to share something personal—coffee that connects where he comes from with where he is now.
This lot is made up of Caturra, a classic Arabica variety known for its clarity and citrusy lift. The cherries are handpicked at peak ripeness, then fully washed and sun-dried with care and precision—a process steeped in tradition and shaped by generations of craft.
At Dafé, we roast Soluna to a light-plus level to highlight its clean structure and layered complexity. In the cup, you’ll find bright lemon zest, ripe peach, and a smooth honeyed finish—vibrant yet grounded, with a natural sweetness that lingers.
